Pressed for time but still want something delicious, healthy and full of Mediterranean flair? These two recipes are quick, colourful, and bursting with flavour—thanks to your two secret weapons: Extra Virgin Olive Oil and Balsamic Vinegar.
1. Flash Mediterranean Salad
Bright, crunchy, and endlessly satisfying.
Ingredients (Serves 2):

2 large ripe tomatoes, chopped

1/2 cucumber, thinly sliced

1/2 red onion, finely sliced
-
A handful of olives (Kalamata or green)
-
Crumbled feta (or vegan alternative)

A few fresh basil leaves
Dressing:

2 tbsp Extra Virgin Olive Oil

1 tbsp Balsamic Vinegar (Classic or Apple)

Sea salt & cracked pepper to taste
Instructions:
Toss everything in a bowl, whisk the dressing, pour over, top with basil. Done.

2. Warm Balsamic Tomato Bruschetta

Ingredients (Makes 4 pieces):

4 slices crusty sourdough or baguette
