5 Minutes Mediterranean - 2 flash recipes using EVOO & Balsamic

1. Flash Mediterranean Salad

Bright, crunchy, and endlessly satisfying.

Ingredients (Serves 2):

  • 2 large ripe tomatoes, chopped

  • 1/2 cucumber, thinly sliced

  • 1/2 red onion, finely sliced

  • A handful of olives (Kalamata or green)

  • Crumbled feta (or vegan alternative)

  • A few fresh basil leaves

Dressing:

  • 2 tbsp Extra Virgin Olive Oil

  • 1 tbsp Balsamic Vinegar (Classic or Apple)

  • Sea salt & cracked pepper to taste

Instructions:
