September is that beautiful bridge between late summer and early autumn—there’s still ripe produce around, but we start craving warmer, slightly heartier dishes too.
Here are two more Flash Mediterranean Recipes using Extra Virgin Olive Oil that fit the season beautifully:
Flash Griddled Courgettes with Lemon & Mint
Fresh courgettes are still abundant in September—and this dish is the perfect way to celebrate them.
Ingredients (Serves 2):

2 medium courgettes (zucchini), sliced lengthways

Zest & juice of 1 lemon

Handful of fresh mint leaves, chopped

2 tbsp Extra Virgin Olive Oil

Sea salt & black pepper
Instructions:

Heat a griddle pan until very hot.

Brush courgette slices with EVOO and griddle for 1–2 mins per side until charred.

Place on a serving plate, drizzle with lemon juice and zest, scatter mint, and season.

Finish with an extra glug of EVOO.
Tip: Serve warm or at room temperature with grilled chicken, halloumi, or alongside some couscous.

Warm Butter Bean & Spinach Skillet with EVOO & Smoked Paprika
A comforting, protein-rich dish that still feels light and Mediterranean—ideal for early autumn.
Ingredients (Serves 2):

1 tin butter beans, drained & rinsed

2 big handfuls of baby spinach

1 small garlic clove, sliced
-
2 tbsp Extra Virgin Olive Oil
-
1/2 tsp smoked paprika (optional)
-
Sea salt & cracked pepper

Squeeze of lemon
Instructions:

Heat EVOO in a pan over medium heat.

Add garlic and cook gently until fragrant (don’t burn it!).

Add butter beans and smoked paprika; stir for 2–3 minutes.

Add spinach and cook just until wilted.

Finish with a squeeze of lemon and a final drizzle of EVOO.
Optional Add-On: Top with a poached or soft-boiled egg for a heartier meal.
