The story of Las Valdesas goes back generations. The olive trees on the estate were planted by the current owner’s grandfather—a legacy of patience and foresight. With traditional varieties like Picual and Hojiblanca, it can take up to eight years before a tree produces a crop good enough for oil. But when it finally does, the reward is worth the wait.

Las Valdesas’ groves stretch along the banks of the Guadalquivir River, where the Mediterranean sun and fertile soils create ideal growing conditions. But it’s not just nature doing the work—this is a farm where quality is an obsession. They harvest five olive varieties—Picual, Arbequina, Hojiblanca, Frantoio, and Manzanilla—each cold-pressed separately to preserve its unique flavour and character. No blending, no shortcuts.
