5-Minute Mediterranean - Lemon & Olive Oil Spring Greens with Eggs

At this time of year in the UK, the first signs of spring appear on our plates.

Purple sprouting broccoli, fresh herbs, peppery radishes and vibrant spring greens start replacing the heavy winter vegetables. It’s the moment when simple Mediterranean cooking really shines: seasonal ingredients, cooked quickly, finished with generous amounts of excellent extra virgin olive oil.

This recipe takes five minutes, uses ingredients widely available in the UK in spring, and makes a light lunch, starter or quick supper.

5-Minute Mediterranean Spring Greens with Lemon & Olive Oil

Ingredients (Serves 2)

  • 1 bunch purple sprouting broccoli

  • 2 large eggs

  • A handful of radishes, sliced

  • A small bunch of flat-leaf parsley or dill

  • 1 lemon

  • 2–3 tbsp high-quality extra virgin olive oil

  • Sea salt

  • Freshly ground black pepper

  • Optional: a slice of good sourdough bread

Method

Bring a small pan of water to the boil and cook the eggs for about 6 minutes for soft-boiled.

At the same time, steam or blanch the purple sprouting broccoli for around 3 minutes until tender but still vibrant green.

Arrange the warm broccoli on a plate. Scatter over the radishes and chopped herbs.

Peel the eggs and cut them in half, placing them on top of the greens.

Now the finishing touch: drizzle generously with extra virgin olive oil, squeeze over a little fresh lemon juice, and season with sea salt and black pepper.

Serve immediately, ideally with a slice of warm sourdough to soak up the olive oil and runny yolk.
