Grilled Courgettes with Yogurt, Garlic & Chili Oil

3. Recipe of the Month: Grilled Courgettes with Yogurt, Garlic & Chili Oil

A vibrant, modern Mediterranean plate: creamy, smoky, spicy, and begging for warm bread on the side.

Ingredients (serves 2–3)

  • 2–3 medium courgettes

  • 2 tbsp Extra Virgin Olive Oil (for grilling)

  • 150 g Greek yogurt

  • 1 small garlic clove, grated

  • 1 tbsp lemon juice

  • 2 tbsp Extra Virgin Olive Oil (for the chili oil)

  • ½ tsp chili flakes (Aleppo, Espelette, or regular)

  • Sea salt & black pepper

  • Optional: toasted pine nuts or pistachios, fresh mint

Method

  1. Slice courgettes lengthwise into long strips. Brush lightly with EVOO and season.

  2. Grill for 2–3 minutes per side until soft with golden char marks.

  3. In a small bowl, mix yogurt, garlic, lemon juice, salt and pepper. Spread onto a plate.

  4. Heat 2 tbsp EVOO in a small pan on low heat. Add chili flakes and warm gently for 20–30 seconds — do not fry.

  5. Layer the grilled courgettes over the yogurt. Spoon the warm chili oil on top.

  6. Finish with pine nuts/pistachios and mint if you have them.

Why this dish works:
The creamy yogurt tempers the warm chili oil, while the EVOO deepens the courgettes’ flavour and brings everything together. It’s elegant but unbelievably quick.
